CMF Knifeworks - Nakiri (One Off Chefs Knife)
This is a One-of-a-Kind Chef's Knife from Ian Pickarski d/b/a CMF Metalworks. This style of knife is a Nakiri, a traditional Japanese chef’s knife*. This Nakiri features a Damasteel Blade with a mirror etched finish, the knife is of full tang construction, the scales are Mother of Pearl with hidden pins over a white liner. I used this knife once; it is super sharp and beyond my culinary skill level, so I am offering it up to a discerning collector and/or chef. I received this new, direct from Ian and offering it at Ian's table price, it is in excellent condition.
Blade length: 5 1/2"
Handle: 4"
Case/sheath: zippered pouch and accompanied by a COA (Certificate of Authenticity)
* The Nakiri is a double bevel edged knife with thin blade profile. It is mainly used for quickly and efficiently chopping, slicing, and mincing vegetables, fruits. Like the Santoku, the Nakiri generally has a slightly taller blade than a similarly sized Gyuto, this provides a little more clearance for the knuckles of your knife hand when cutting directly above a cutting board and provides a good blade surface for the knuckles of your free hand to guide the blade.
